I will never forget the first time I tried it - it was THAT good! I stopped off at a local Thai restaurant in the city where I am from and ordered it because I had never tried it and it sounded interesting. Boy was I hooked. That first mouthful was amazing and I literally didn't even want to eat the rest of my food. Ever since then I always order it and I am rarely disappointed.

Super Simple Recipe!
Make minute rice according to package directions but use one cup of coconut milk in place of one cup of water and sprinkle in some nutmeg. For jasmine rice it is 1 cup rice to 1 cup coconut milk and ½ cup water. Once rice is cooked, stir in salt and pepper, and 2 Tablespoons butter.
